PRODUCTION AREA

Only grapes from the finest "crus" selected by our agronomists and oenologists are used in production, cultivated in the high hills of Asti, an area crowned as a UNESCO World Heritage.

DURATA MATURAZIONE

La rifermentazione in bottiglia avviene lentamente ad una temperatura costante di 13-14°C così come costanti sono le condizioni di umidità e assenza di luce, secondo il rigoroso Metodo Classico CUVAGE. Dopo un minimo di 24 mesi di maturazione sui lieviti il BLANC de BLANCS è pronto per essere messo "in punta".

MATURATION ON LEES

Slow refermentation in the bottle occurs at a temperature of 13-14°C with consistently maintained humidity levels and in the absence of light, in accordance with the rigorous CUVAGE Classic Method.
After resting on its lees for a minimum of 24 months, BLANC de BLANCS is ready for the "mise en pointe".

TASTING NOTES

A tenuous straw yellow, featuring a fine perlage and delicate froth which harmoniously embraces the glass.
It reveals delicate aromatic hints of bread crust and dried fruits.
It presents the palate with great structure and softness, with a persistent and balanced finale.

PAIRINGS

Perfect as an aperitif or served with vegetable and legume soups.
This wine pleasantly surprises when served with medium to aged cheeses, including sheep's cheeses.
