PRODUCTION AREA

Nebbiolo grapes are cultivated in the Barolo area located between 380 and 450 metres above sea level.;
Pinot nero and Chardonnay are produced from "crus" selected by our agronomists and oenologists, from the high hills of Asti, an area crowned as a UNESCO World Heritage.

MATURATION ON LEES

Slow refermentation in the bottle occurs at a temperature of 13-14°C with consistently maintained humidity and light levels, in accordance with the rigorous CUVAGE Classic Method.
After resting on its lees for a minimum of 36 months, CUVAGE de CUVAGE is ready for the "mise en pointe".

TASTING NOTES

Tenuous straw yellow in colour, this wine features an extremely fine perlage which is gently and gradually released in the glass.
Its aroma features a surprising degree of minerality conferred by the limestone soils, which mingles sweetly with delicate hints of bread crust and dark spices.
In virtue of its "pas dosé" production process, this wine is distinctive in personality and features a notable persistence in taste.

PAIRINGS

Cuvage de cuvage is best served with robiola di Roccaverano soft cheese as well as with rich and succulent meat based dishes.
